During Christmas, in preparation for coming back to Boston, I made a few goals that had to do with appreciating Boston/New England (in case I was moving away any time soon) and to help me be more healthy with eating. One of the goals that related to both of those was to cook at least one fish dish each month. In part because I don't know a lot about fish or other seafood. And in part because I figured living in Boston was a good time to figure things out.
So, this month (today) I made fish tacos. It's not Boston-y at all, but since that was a secondary part of the goal, it doesn't matter. I wish I'd taken pictures, because they looked awesome (and it would make this a much more exciting post), but I was busy eating them.
The recipe I used was from Better Homes and Garden (love that cook book!) and included mango salsa. Which was delicious and really tied the tacos together.
